Thanks to their growing prestige, the cellars of Gallura have by now reached levels of excellence, both in terms of the production of the wine culture of Gallura and of the presence of Merlot and Cabernet, frequently certified and internationally recognized. All of this has favoured a major and diffuse culture of oenology pushing the passionate seekers of fine drinks to taste . Etiquette and experimenting with the correct wines to perfectly complement every dish.; so, in just a few years, the old hostelries have gradually been disappearing to make room for locales which offer wine by the glass from the wine list, very often accompanying this with agreeable, savoury snacks and promptly prepared appetizers. New trends and fashions that are emerging in the world of wine, rejuvenating a sector which is becoming more and more attentive to the patterns of growth in a market which is growing continuously. In Olbia there are a growing number of wine bars with open cellars and drinking establishments with a kitchen annex, offering a range of products of the cuisine of Gallura. For those keen on cuisine, a must see is the Enoteca Pievati, 7 Corso V. Emanuele II, on the corner of via Garibaldi (tel. +39 (0)789 206098 olbia.info@pievati.com). Open all year round, during the summer season organizes open-air tastings (wine and mirto, cheese, sweets and honey), inside there is also a vast assortment of local and Italian wines. Is also possible to find optimum locally made sausages and cheese, the famous Cabras bottarga, sweets and honey.

For the more refined palate there is the Enoteca Vignando, 2 Corso Umberto (tel. +39 (0)789 21653). This very well cared-for and aesthetically pleasing spot offers an insuperable selection of national and international wines, champagne and spirits. One can sample excellent local wines accompanied by savoury finger food. Going along Corso Umberto, one arrives at one of the best locales in town, in Piazza Regina Margherita, where we can find, among others, in the Wine Bar Cosimino (tel. +39 (0)789 21001) excellent cocktails, savoury snacks, but, above all, a great selection of local and national wines. Not far from there, in via Aquedotto, one can find a little place called "Fravapa" where, with a few euros, one can eat and purchase typical Gallurese products.

Travelling by car in the direction of the Costa Smeralda, one arrives in Viale A. Moro, the great shopping street of Olbia, and at number 119 one finds the well-established Enoteca Buioni, a large assortment of local and national wines, typical products, and the opportunity for a little sampling. A few hundred metres further on one arrives at one of the most fashionable places in town, Nord Est, (tel. 0789-53456) at viale Aldo Moro 135. This vast local with a covered outside section, managed by the Bussu brothers, is considered a fixed reference point for those looking to network, and also a fine wine bar, with cellar. Near Fausto Noce park in 6, via Galvani (tel. +39 0789 51152) we find the Malp bar with wines from all the regions of Italy and an international section, in a refined atmosphere, supported by the taste and experience of the titular owner Pietro, coupled with delicious restoration.
